In the car towards Fredrikstad we feel exited, on our way to spend yet another day with this amazing group of strong fighters creating different fish based dishes and today we are looking forward to the reunion.

Veumalleens refugee center is closing in December and this group of people is going to be spread out in different places around Norway, some already know where they are going but others still don’t know. The feeling of uncertainty and loss is present in the hallways of the reception center. Two days prior to our meeting Sunn Start took part in preparing the food for the closing party of Veumalléen Asylmottak so we already know that people are tired and unmotivated. Saying goodbye is always an emotional roller-coaster, which is why we bring a simple plan, veggies dips and loots of fruit. Perfect for the days where your body need a boost of vitamins and nutrients.

There are many great reasons to eat vegetables and a diet rich in fruits, it can lower blood pressure, reduce risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar which can help keep appetite in check.

By eating a variety of types and colors you give your body the mix of nutrients it needs. Try dark leafy greens; brightly colored red, yellow and orange vegetables and fruits; and cooked tomatoes. Yes cooked! It seems like cooking tomatoes, such as in spaghetti sauce, makes the fruit heart-healthier and boosts its cancer-fighting ability. All this, despite a loss of vitamin C during the cooking process. The reason: cooking substantially raises the levels of beneficial compounds called phytochemicals. So now we know that!

We manage to bring on a couple of happy troopers that joined us for the chopping and preparing of the food. The afternoon in Røde Mølle turned out to be a success. Ride Mølle´s house chef made bread and gave his best “student diet” advice; yogurt, oatmeal and fruit seemed to be his easy and healthy fix, (because we all remember the day when the pocket was empty and the stomach was screaming).
